Ingredients

  • 2 medium flour tortillas
  • 1/2 lb ribeye or top round beef, thinly sliced
  • 1/2 medium onion, chopped
  • 1/2 red pepper, diced
  • 1/2 green pepper, diced
  • 6 oz mushrooms, diced
  • 3 slices provolone cheese
  • 1 Tbsp light olive oil (divided)
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Heat 2 teaspoons of olive oil in a large skillet over medium-high heat.
  2. Add the beef and season with salt and pepper; cook until browned. Remove from skillet and keep warm.
  3. In the same skillet, add remaining oil and sauté chopped onion, peppers, and mushrooms until tender.
  4. Return the beef to the skillet with minced garlic; mix until heated through.
  5. On each tortilla, spread mayonnaise if desired, then add filling and top with provolone cheese. Fold each tortilla.
  6. In a clean skillet over medium heat, cook each quesadilla until golden brown on both sides and cheese is melted.
