Ingredients
- 2 medium flour tortillas
- 1/2 lb ribeye or top round beef, thinly sliced
- 1/2 medium onion, chopped
- 1/2 red pepper, diced
- 1/2 green pepper, diced
- 6 oz mushrooms, diced
- 3 slices provolone cheese
- 1 Tbsp light olive oil (divided)
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions
- Heat 2 teaspoons of olive oil in a large skillet over medium-high heat.
- Add the beef and season with salt and pepper; cook until browned. Remove from skillet and keep warm.
- In the same skillet, add remaining oil and sauté chopped onion, peppers, and mushrooms until tender.
