  • 4 salmon fillets (skin-on, about 6 oz each)
  • 1/2 cup finely chopped pecans
  • 1/3 cup unseasoned panko breadcrumbs
  • 1/2 cup pure maple syrup
  • 1/4 cup Dijon mustard
  • 1/4 cup bourbon
  • 1 garlic clove (minced)
  • 2 teaspoons chopped fresh thyme leaves
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon unsalted butter (melted)
  • Kosher salt and freshly-ground black pepper

Instructions

  1. Preheat oven to 425°F (220°C). Prepare a baking sheet with cooking spray.
  2. Mix pecans, panko, thyme, smoked paprika, melted butter, salt, and pepper in a bowl.
  3. In a pot over medium heat, combine maple syrup, Dijon mustard, bourbon, minced garlic, and pepper until well mixed.
  4. Place salmon on the baking sheet skin-side down; season with salt and pepper. Brush with glaze mixture and top with crust.
