Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract; mix until fully combined.
- In another bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture until a smooth dough forms.
- Scoop out about 2 tablespoons of dough, flatten into discs, and place half on the prepared baking sheet.
- Add approximately 1 teaspoon of jelly to the center of each disc.
- Top with another piece of dough; seal edges well by pressing down or using a fork for decoration.
- Bake for about 12-15 minutes until edges are golden brown.
- Let cool on the baking sheet for five minutes before transferring to a wire rack.
