  • 1 1/2 teaspoons Italian seasoning
  • 1/4 teaspoon nutmeg (optional)
  • 16 ounces fresh potato gnocchi
  • 2 1/2 cups cooked chicken (torn into bite-sized pieces)
  • 1 cup sweet peas (fresh or frozen)
  • Salt and freshly ground black pepper
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Melt 5 tablespoons of unsalted butter in a large deep skillet over medium heat. Add 3 sliced carrots, 3 diced celery ribs, and 1 chopped yellow onion with a pinch of salt. Cook for 6 to 8 minutes until softened.
  2. Stir in 10 ounces of quartered cremini mushrooms and 4 minced garlic cloves; cook for about 5 minutes until mushrooms release moisture.
  3. Sprinkle in 1/4 cup of flour, stirring constantly for 2 minutes.
  4. Gradually whisk in 3 cups of chicken stock and then add 1 cup of whole milk or half-and-half, mixing well.
  5. Add 1 tablespoon of Dijon mustard and seasonings; bring to a gentle simmer.
  6. Incorporate 16 ounces of fresh potato gnocchi and cook uncovered for about 4 to 5 minutes while stirring occasionally.
