  • 1 cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 1 cup light brown sugar (packed)
  • 1 tbsp vanilla extract
  • 3 large eggs (room temperature)
  • 1/4 cup full-fat sour cream (room temperature)
  • 2 1/2 cups unsalted butter (room temperature)
  • 4 cups powdered sugar
  • 2 tbsp heavy cream
  • 2 tsp vanilla extract
  • 1 tsp vanilla bean paste
  • 1 cup white chocolate chips
  • 1/4 cup + 3 tbsp heavy cream
  • white food coloring (optional)
  • oatmeal cream pie cookies (for decorating)

Instructions

  1. Preheat oven to 350°F. Line three 8-inch cake pans with parchment paper.
  2. Boil water and add oats; let cool after softening.
  3. Whisk together flour, baking soda, salt, cinnamon, and nutmeg in a bowl.
  4. Beat butter and sugars until fluffy. Add eggs, sour cream, and vanilla; mix until combined.
  5. Fold in cooled oats and dry ingredients until just combined.
  6. Divide batter among prepared pans and bake for 20–22 minutes.
  7. Cool cakes before frosting with buttercream made from butter, powdered sugar, heavy cream, and vanilla.
  8. Assemble layers with frosting in between; frost outside and pour chocolate glaze on top.
