  • 2 teaspoons orange zest
  • ½ cup fresh orange juice
  • 1 tablespoon extra-virgin olive oil
  • 1½ teaspoons ground cumin
  • 1 teaspoon kosher salt
  • ½ small red onion
  • ¼ cup fresh mint leaves
  • ¼ cup minced fresh cilantro leaves

Instructions

  2. Wrap each beet in tin foil and place on a baking sheet. Roast for 40 to 50 minutes until tender.
  3. Allow beets to cool, then peel and cut into 2-inch pieces.

  5. Add beets, red onion, mint, and cilantro; toss until well coated.
  6. Serve chilled or at room temperature.
