- 1 pound chicken breasts (sliced into thin strips)
- 3 tablespoons cornstarch
- 3 tablespoons vegetable oil
- 1 medium carrot (thinly sliced)
- 6 ounces snow peas
- 6 ounces mushrooms (sliced)
- 8 ounces canned water chestnuts (drained)
- 8 ounces canned bamboo shoots (drained)
- 3 cloves garlic (minced)
- 1 ¼ cups chicken stock
- 2 tablespoons soy sauce
- 1 teaspoon granulated sugar
- 1 teaspoon toasted sesame oil
Instructions
- In a large bowl, toss chicken with 2 tablespoons cornstarch, salt, and white pepper. Add 1 tablespoon vegetable oil and mix well.
- Heat a wok or large skillet over medium-high heat with 2 tablespoons vegetable oil. Cook chicken in a single layer for about 30 seconds per side; remove and set aside.
- Stir-fry carrots, snow peas, and mushrooms for approximately 3 minutes until just softened.
- Add water chestnuts, bamboo shoots, and minced garlic; sauté for another minute.
- Return chicken to the skillet; add chicken stock, soy sauce, sugar, and sesame oil. Bring to a gentle boil for 1–2 minutes.
- Mix remaining cornstarch with cold water to create a slurry; pour into the skillet while stirring until sauce thickens.
