  • 2 boneless, skinless chicken breasts
  • 1 cup shredded Monterey Jack cheese
  • 1 medium yellow onion
  • 3 garlic cloves
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Seasonings: paprika, Italian seasoning, salt, and black pepper

Instructions

  1. Cook spaghetti according to package instructions until al dente; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with paprika, Italian seasoning, salt, and pepper. Cook for 5-7 minutes until golden brown; remove from skillet.
  3. In the same skillet, melt butter and sauté chopped onion for 3-4 minutes until softened. Add garlic and cook for an additional 30 seconds.
  4. Pour in chicken broth and heavy cream; stir and simmer until slightly thickened (about 5 minutes).
  5. Return chicken and add cooked spaghetti to the sauce; toss well to combine.
  6. Sprinkle cheese on top, cover the skillet to melt for 2-3 minutes.
  7. Garnish with fresh parsley and serve warm.
