  • 225 g (1 3/4 cups) all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 175 g (3/4 cup) softened butter
  • 150 g (3/4 cup) granulated sugar
  • 150 ml (2/3 cup) milk
  • 2 large eggs, lightly beaten
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 170°C (325°F) and prepare your loaf tin by greasing it and lining it with parchment paper.
  2. In a bowl, sieve the flour, baking powder, and salt together.
  3. Cream softened butter and sugar in a mixing bowl until light and pale. Gradually add in the beaten eggs, ensuring to mix in the vanilla extract afterward.
  4. Alternate adding half of the milk and half of the flour mixture while mixing on low speed; repeat with remaining milk and flour until just combined.
  5. Pour the batter into the prepared loaf tin and bake for about 1 hour or until a skewer inserted comes out clean.
  6. Allow to cool in the tin briefly before transferring to a cooling rack.
