  • Black beans
  • Flour tortillas
  • Cheddar cheese
  • Monterey Jack cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté chopped onion and minced garlic until softened. Add ground beef or turkey and cook until browned; drain excess fat.
  3. Stir in taco seasoning, rinsed black beans, diced tomatoes with green chilies, and optional corn. Simmer for about 5 minutes.
  4. Grease a casserole dish. Layer flour tortillas, half of the meat mixture, and half of the shredded cheese. Repeat layers and finish with another tortilla layer topped with remaining cheese.
