  • 1 medium onion (diced)
  • 1 medium carrot (diced)
  • 23 celery stalks (diced)
  • 2 large garlic cloves (finely chopped)
  • ½ cup sun-dried tomatoes (roughly chopped)
  • A pinch of red chili flakes
  • 1 bay leaf
  • ¾ cup ditalini pasta
  • 6 cups chicken stock
  • ½ cup low-fat cream cheese
  • ½ cup half-and-half
  • 2 cups rotisserie chicken (shredded)
  • â…“ cup Parmesan cheese (grated)
  • 2 cups fresh baby spinach
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrot, and celery; cook until softened (about 5 minutes).
  2. Stir in garlic and cook for another minute. Add sun-dried tomatoes and red chili flakes; cook for an additional minute.
  3. Pour in chicken stock, add bay leaf and ditalini pasta. Bring to a boil, then reduce heat and simmer until pasta is almost cooked (10–12 minutes).
  4. Incorporate cream cheese and half-and-half; stir until melted.
  5. Mix in shredded rotisserie chicken, Parmesan cheese, and spinach; cook covered for another 1–2 minutes until spinach wilts.
  6. Season with salt and pepper to taste before serving.
