- ½ cup sun-dried tomatoes (roughly chopped)
- A pinch of red chili flakes
- 1 bay leaf
- ¾ cup ditalini pasta
- 6 cups chicken stock
- ½ cup low-fat cream cheese
- ½ cup half-and-half
- 2 cups rotisserie chicken (shredded)
- â…“ cup Parmesan cheese (grated)
- 2 cups fresh baby spinach
- Salt and freshly ground black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion, carrot, and celery; cook until softened (about 5 minutes).
