  • 1 cup dried red kidney beans (soaked overnight)
  • 4 vegan sausages (sliced)
  • 1 medium onion (diced)
  • 2 stalks celery (diced)
  • 1 medium green bell pepper (diced)
  • 5 cups vegetable stock
  • 2 tablespoons Cajun seasoning
  • 1 cup long white grain rice

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add sliced vegan sausages and cook until browned, about 5 minutes.
  3. Stir in diced onion, celery, and bell pepper; cook until onions are translucent.
  4. Add Cajun seasoning, vegetable stock, bay leaves, thyme, and garlic; mix well.
  5. Drain soaked beans and add to the pot along with black pepper and optional vinegar.
  6. Cover and simmer for 1 to 1½ hours until beans are soft, adding water as needed.
  7. Cook rice according to package instructions in a separate pot.
  8. To thicken, mash some beans against the pot's side during the last few minutes of cooking.
  9. Remove bay leaves before serving hot over rice.
