Instructions

- In another bowl, beat sugar, vegetable oil, butter-flavored shortening, eggs, vanilla extract, lemon extract, and lemon zest until fluffy.
- Gradually combine dry ingredients with buttermilk into the wet mixture until just mixed.
- Stir in white vinegar and hot lemon water; add food coloring if desired.
- Divide the batter into prepared pans and bake for 25–30 minutes.
- Allow cakes to cool before frosting with lemon cream cheese frosting made by beating softened cream cheese and butter with extracts and powdered sugar.
