Instructions

  1. Prepare the lemon curd by combining lemon juice, egg yolks, sugar, corn starch, and lemon zest in a saucepan. Cook over medium heat until thickened, then stir in cold butter. Let cool.
  2. Preheat oven to 350°F (175°C). Cream butter and sugar until fluffy. Add eggs one at a time, then vanilla and lemon zest.
  3. In another bowl, mix flour, baking powder, and salt; combine with wet mixture until just combined.
  4. Scoop dough into balls and create indents with your thumb. Fill each indent with lemon curd.
