- 1 and 3/4 cups (210g) all-purpose flour
- 1 cup (84g) unsweetened cocoa powder
- 1 and 1/2 teaspoons baking soda
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 2 large eggs (room temperature)
- 1 large egg yolk (room temperature)
- 1 cup (227g) sour cream
- 1/4 cup (57ml) whole milk
- 1/2 cup (113ml) oil (canola, vegetable, or refined coconut – melted)
- 1 Tablespoon vanilla extract
- 1 cup (227ml) freshly brewed coffee or freshly boiled water
- 8 ounces semi-sweet or bittersweet chocolate, coarsely chopped
- 1 and 1/2 cups (340g) unsalted butter (room temperature)
- 2 and 3/4 cups (426g) confectioner's sugar (sifted)
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and prepare two 9-inch round baking pans with non-stick spray.
- In a mixing bowl, combine sugars, flour, cocoa powder, baking soda, and salt.
- In another bowl, whisk together eggs, sour cream, milk, oil, and vanilla; mix into dry ingredients until just combined.
- Gradually add hot coffee or boiling water; mix until smooth.
- Divide batter between pans and bake for 30-32 minutes or until a toothpick comes out clean.
- Cool cakes in pans for 10 minutes before transferring them to a cooling rack.
