  • 3/4 teaspoon salt
  • 2 large eggs (room temperature)
  • 1 large egg yolk (room temperature)
  • 1 cup (227g) sour cream
  • 1/4 cup (57ml) whole milk
  • 1/2 cup (113ml) oil (canola, vegetable, or refined coconut – melted)
  • 1 Tablespoon vanilla extract
  • 1 cup (227ml) freshly brewed coffee or freshly boiled water
  • 8 ounces semi-sweet or bittersweet chocolate, coarsely chopped
  • 1 and 1/2 cups (340g) unsalted butter (room temperature)
  • 2 and 3/4 cups (426g) confectioner's sugar (sifted)
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare two 9-inch round baking pans with non-stick spray.
  2. In a mixing bowl, combine sugars, flour, cocoa powder, baking soda, and salt.
  3. In another bowl, whisk together eggs, sour cream, milk, oil, and vanilla; mix into dry ingredients until just combined.
  4. Gradually add hot coffee or boiling water; mix until smooth.
  5. Divide batter between pans and bake for 30-32 minutes or until a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes before transferring them to a cooling rack.
  7. For frosting, melt chopped chocolate; beat butter with confectioner's sugar and mix in melted chocolate and vanilla until creamy.
