  • 4 cups Water
  • 2 tbsp Kashmiri/Himalayan green tea
  • 1/2 tsp Baking soda
  • 12 Star anise
  • 2 Cardamom pods (crushed)
  • 1 Cinnamon stick
  • 1/4 tsp Salt
  • 2 cups Whole milk
  • Sugar or honey to taste

Instructions

  1. Boil water in a saucepan and steep green tea for about 5 minutes.
  2. Add baking soda and boil for an additional 2 minutes until the color deepens.
  3. Stir in spices (star anise, cardamom, cinnamon) and boil for another minute.
  4. Reduce heat and simmer for 20-30 minutes until liquid reduces by half.
  5. Add salt and mix well.
  6. Incorporate whole milk; bring to a boil while stirring until it turns pink.
  7. Strain the chai into cups to remove spices and leaves.
  8. Sweeten with sugar or honey to taste; garnish with crushed nuts if desired.
