Ingredients

  • 2 lb thinly sliced beef (or chicken, tofu, or shrimp)
  • 1 lb Korean sweet potato noodles (glass noodles)
  • 3 medium carrots, julienned
  • 1 large white onion, thinly sliced
  • 1/2 bunch green onions, chopped
  • 6 garlic cloves, minced
  • 1/2 lb spinach leaves
  • 4 tablespoons sesame oil
  • 1 tablespoon olive oil
  • 6 tablespoons soy sauce
  • 3 tablespoons brown sugar

Instructions

  1. Cook the sweet potato noodles in boiling water with olive oil for 5–6 minutes. Drain and set aside.
  2. In a skillet over high heat, cook the beef until browned. Season with half of the soy sauce, half of the sesame oil, and half of the brown sugar. Set aside.
  3. Stir-fry carrots and onions in another skillet until softened.
  4. Add remaining soy sauce, sesame oil, brown sugar, garlic, and green onions to the vegetables; cook for 1 minute before adding spinach until wilted.
  5. Combine the cooked noodles with beef and vegetables in a large bowl; toss to coat evenly.
  6. Serve warm with additional green onions as garnish.
