- 4 large baking potatoes
- 9 oz cooked and chopped bacon
- 5.3 oz grated cheddar cheese
- 5.3 oz cream cheese
- 3 fresh jalapeños, deseeded and finely diced
- 2 tbsp butter
- Garlic powder, salt, and black pepper to taste
Instructions
- Preheat oven to 356°F (180°C). Prick potatoes with a fork, coat with olive oil, season with salt and pepper, then bake for 60-70 minutes until tender.
- Once cool, slice off the tops of the potatoes and scoop out most of the insides.
- In a mixing bowl, combine scooped potato with cream cheese, butter, garlic powder, salt, pepper, bacon, cheddar cheese, and jalapeños.
- Fill potato skins with the mixture and top with remaining cheese, bacon, and jalapeños.
- Bake at 430°F (220°C) for about 15 minutes until golden.
