  • 3 Tbsp olive oil
  • 3 large carrots, peeled and chopped
  • 1 yellow onion, quartered
  • 5 cloves garlic, peeled
  • 3 ribs celery, halved
  • 8 cups chicken or vegetable broth
  • 1 tsp salt
  • Black pepper to taste
  • 1 ¼ cup pastina
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat. Add carrots, onion, garlic, celery, salt, and pepper; cook for 4–5 minutes until lightly browned.
  2. Pour in the broth and add the parmesan rind (if using). Bring to a boil over high heat, then reduce to medium-low and simmer for 25–30 minutes until vegetables are soft.
  3. Remove the parmesan rind and puree the soup using an immersion blender until smooth.
  4. Stir in pastina and cook according to package instructions (about 8–10 minutes) until al dente.
  5. Squeeze lemon juice into the soup; adjust seasoning if needed.
  6. Serve hot with garnishes like parmesan cheese and parsley.
