  • 1 cup peaches, finely diced (fresh or canned)
  • 1/2 cup milk
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 3 cups powdered sugar
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons peach puree (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter, sugar, and honey until fluffy. Add eggs one at a time and mix in vanilla extract.
  4. Alternate adding dry ingredients and milk to the butter mixture until combined. Gently fold in diced peaches.
  5. Fill cupcake liners two-thirds full and bake for 18–22 minutes until a toothpick comes out clean.
  6. Allow cupcakes to cool completely before preparing the frosting by beating together cream cheese and butter until smooth. Gradually mix in powdered sugar and honey.
