  • 1 ½ lb salmon (skin removed, cut into 1-inch cubes)
  • 3 tablespoons olive oil
  • ¼ cup honey
  • 2 teaspoons minced garlic
  • 1 teaspoon grated ginger
  • 3 tablespoons soy sauce
  • Salt and pepper to taste

Instructions

  1. Pat dry salmon cubes with paper towels and season with paprika, garlic powder, onion powder, salt, and black pepper. Drizzle with one tablespoon olive oil.
  2. Heat a heavy skillet over medium-high heat with one tablespoon of olive oil. Cook seasoned salmon cubes in a single layer for 4-5 minutes until crispy and golden.
  3. In the same skillet, add another tablespoon of olive oil along with minced garlic and grated ginger; sauté until fragrant (about one minute). Stir in soy sauce, rice vinegar, and honey; simmer until slightly thickened (3-5 minutes).
  4. Return salmon to the skillet and toss to coat evenly in the sauce. Serve over rice and garnish with sesame seeds and chopped chives.
