  • 1/2 teaspoon honey (for dressing)
  • 1/2 teaspoon garlic powder (for dressing)
  • 1/4 teaspoon salt (for dressing)
  • 1/4 teaspoon black pepper (for dressing)

Instructions

  1. Whisk together honey, chipotle peppers, smoked paprika, garlic powder, cumin, salt, black pepper, and lime juice in a small bowl.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper; cook for about 6–8 minutes per side until golden brown (internal temperature should reach 165°F).
  3. Drizzle the prepared sauce over the cooked chicken. Let it rest for five minutes before slicing into strips.
  4. In each bowl, layer rice followed by black beans, cherry tomatoes, corn, red onion, avocado slices, and cilantro.
  5. Optionally whisk together olive oil, lime juice, honey, garlic powder, salt, and black pepper to create a dressing to drizzle over the bowls.
  6. Top each bowl with sliced honey chipotle chicken and serve immediately.
