Instructions

  1. Preheat your oven to 375°F (190°C) and grease an 8-inch baking dish or cast-iron skillet.
  2. Cook and mash the sweet potato until smooth; set aside.
  3. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  4. In another bowl, combine the mashed sweet potatoes, buttermilk, melted butter, eggs, and honey until well mixed.
  5. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  6. Transfer the batter to your prepared dish and bake for 25-30 minutes until a toothpick comes out clean.
