Instructions
- Preheat your oven to 400°F (200°C).
- Soak the chopped potatoes in ice-cold water for 10 minutes; drain and pat dry.
- Cook bacon in a skillet until crispy; set aside but reserve some bacon fat.
- Toss dried potatoes with olive oil, reserved bacon fat, garlic, salt, pepper, and onion powder.
- Spread on a lined baking sheet and bake for 20 minutes until soft.
- Add cooked bacon and drizzle with honey; bake for an additional 15-20 minutes until golden brown.
