  • 4 large Russet or Yukon Gold potatoes (peeled & chopped)
  • 6 slices thick-cut bacon
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • Salt
  • Pepper
  • Onion powder
  • Fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Soak the chopped potatoes in ice-cold water for 10 minutes; drain and pat dry.
  3. Cook bacon in a skillet until crispy; set aside but reserve some bacon fat.
  4. Toss dried potatoes with olive oil, reserved bacon fat, garlic, salt, pepper, and onion powder.
  5. Spread on a lined baking sheet and bake for 20 minutes until soft.
  6. Add cooked bacon and drizzle with honey; bake for an additional 15-20 minutes until golden brown.
  7. Garnish with fresh parsley before serving hot.
