  • 1/2 cup (120ml) heavy cream
  • 3 tablespoons (44ml) water
  • 1/4 cup (60ml) light corn syrup
  • 1 cup (200g) sugar
  • 1/2 teaspoon flaked sea salt

Instructions

  1. Prepare a 9×5-inch loaf pan by lightly oiling it and lining it with parchment paper.
  2. In a microwave-safe bowl, melt the butter with the heavy cream until hot.
  3. In a saucepan, combine water, corn syrup, and sugar; stir to moisten.
  4. Boil the mixture, covered, for about one minute to melt any sugar stuck to the sides.
  5. Remove the lid and cook until it reaches 320°F (160°C), turning light amber around the edges.
  6. Carefully add the butter and cream mixture slowly while stirring.
  7. Cook until the temperature reaches 240°F (115°C).
  8. Pour into the prepared pan and sprinkle with sea salt; cool completely before cutting.
