  • 12 ounces milk chocolate
  • 2 tablespoons coconut oil
  • 1 cup marshmallow fluff
  • 1/3 cup unsweetened flaked coconut
  • 2 large egg whites
  • 1/4 teaspoon cream of tartar
  • 2/3 cup light corn syrup
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Line a standard muffin tin with muffin liners.
  2. Melt the chocolate and coconut oil using a double boiler or microwave until smooth.
  3. Spoon chocolate into muffin liners, spreading it up the sides. Sprinkle chopped coconut on top and chill until set.
  4. Add marshmallow fluff to each cup, sprinkle remaining coconut, and chill again until firm.
  5. Re-melt any leftover chocolate and cover each cup, smoothing it out before chilling once more.
