  • 1.75 cups granulated sugar
  • 3 large eggs
  • 1.5 cups ripe bananas, mashed
  • 1 cup buttermilk
  • 2 tsp vanilla extract
  • 1 cup walnuts, toasted & chopped
  • 23 medium ripe bananas, sliced
  • 1 Tbsp lemon juice
  • 2 Tbsp brown sugar
  • 2 cups heavy whipping cream
  • 0.250.5 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Toast walnuts in a skillet over medium heat until fragrant (about 3–4 minutes). Let cool.
  3. In a bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
  4. In another bowl, beat softened butter and sugar until fluffy. Add eggs one at a time and stir in vanilla extract.
  5. Fold in mashed bananas and buttermilk until just combined.
  6. Gradually add dry ingredients to wet mixture, folding in toasted walnuts last.
  7. Pour batter into prepared pans and bake for 30–35 minutes until a toothpick comes out clean. Cool completely on wire racks.
  8. Assemble by layering whipped cream and banana slices between cake layers; frost the top and sides with remaining whipped cream.
  9. Chill for at least one hour before serving.
