- 1 1/4 cup blanched almond flour
- 3 Tbsp coconut sugar
- 1 Tbsp ground flax
- 1/8 tsp salt
- 3 Tbsp melted coconut oil
- 1 Tbsp water
- 1 tsp vanilla extract
- 2 Tbsp dark chocolate
- 3 Tbsp peanut butter or Sunbutter
- 1 cup dark chocolate (for coating)
- 1/2 Tbsp coconut oil
Instructions
- In a mixing bowl, combine almond flour, coconut sugar, ground flax, and salt. Mix in melted coconut oil, water, and vanilla until smooth.
- Shape the dough into rectangular bars on a lined baking sheet.
- Preheat the oven to 350°F (175°C) and bake bars for about 8 minutes until lightly golden. Let cool.
- Melt dark chocolate and spread peanut butter over each bar; drizzle with additional melted chocolate.
- Coat bars in melted chocolate mixed with coconut oil; chill in the refrigerator for at least 30 minutes.
