  • 1 1/4 cup blanched almond flour
  • 3 Tbsp coconut sugar
  • 1 Tbsp ground flax
  • 1/8 tsp salt
  • 3 Tbsp melted coconut oil
  • 1 Tbsp water
  • 1 tsp vanilla extract
  • 2 Tbsp dark chocolate
  • 3 Tbsp peanut butter or Sunbutter
  • 1 cup dark chocolate (for coating)
  • 1/2 Tbsp coconut oil

Instructions

  1. In a mixing bowl, combine almond flour, coconut sugar, ground flax, and salt. Mix in melted coconut oil, water, and vanilla until smooth.
  2. Shape the dough into rectangular bars on a lined baking sheet.
  3. Preheat the oven to 350°F (175°C) and bake bars for about 8 minutes until lightly golden. Let cool.
  4. Melt dark chocolate and spread peanut butter over each bar; drizzle with additional melted chocolate.
  5. Coat bars in melted chocolate mixed with coconut oil; chill in the refrigerator for at least 30 minutes.
