  • 3 cups broccoli florets

  • 1 tablespoon Cajun seasoning
  • Cooked white rice (for serving)
  • ½ cup mayonnaise or plain Greek yogurt
  • 1 tablespoon chipotle chili powder
  • 1 teaspoon garlic powder
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • ½ teaspoon salt (plus more to taste)
  • ¼ teaspoon black pepper (plus more to taste)

Instructions

  1. Preheat oven to 425°F. Line baking sheets with parchment paper.
  2. Toss sweet potatoes and broccoli with 1 tablespoon olive oil and ½ tablespoon Cajun seasoning on one sheet pan.
  3. In another bowl, coat chicken pieces with remaining olive oil and Cajun seasoning; spread on a separate sheet pan.
  4. Bake for 15-20 minutes until chicken reaches 165°F; return sweet potatoes for an additional 5-10 minutes until fork-tender.
  5. For the chipotle drizzle, whisk together all sauce ingredients in a small bowl.
  6. Assemble by layering rice at the bottom of bowls followed by chicken, sweet potatoes, broccoli, avocado slices, green onions (if desired), and drizzle with chipotle sauce.
