Instructions

  2. In another bowl, mix melted coconut oil (or butter), egg, and vanilla. Stir in maple syrup until well combined.
  3. Add dry ingredients to the wet mixture and stir until just combined. Gently fold in grated carrots.
  4. Chill dough for 30 minutes to help cookies hold their shape.
  5. Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper.
  6. Drop rounded scoops of dough onto the prepared sheet and flatten slightly.
