Ingredients
- 1 pound salmon fillet
- 1/2 cup panko crumbs
- 1 egg
- 2 green onions (chopped)
- 1/2 poblano pepper (seeded and chopped)
- 1 tablespoon fresh lemon or lime juice
- 1 large ripe avocado
- Salt and pepper to taste
Instructions
- Chop the salmon fillet into small pieces and place it in a mixing bowl.
- Add panko crumbs, egg, green onions, poblano pepper, lemon or lime juice, salt, and pepper to the bowl. Mix until well combined.
- Preheat your grill pan or BBQ to medium-high heat.
- Form the salmon mixture into patties and grill each one for about 4 minutes on each side until cooked through.
- While grilling, prepare the avocado salsa by combining chopped avocado, poblano pepper, green onions, lemon or lime juice, salt, and pepper in another bowl. Mix gently.
- Serve each burger topped with a scoop of avocado salsa.
