  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cups cooked rice or quinoa
  • 2 cups halved grape or cherry tomatoes
  • 4 cups shredded romaine lettuce
  • 1 cup sliced red onion
  • 1 cup plain Greek yogurt

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes to create the marinade.
  2. Pound chicken breasts to even thickness. Marinate in the mixture for at least 30 minutes.
  3. Combine tzatziki ingredients (Greek yogurt, grated cucumber, lemon juice, olive oil, minced garlic, salt) in another bowl; mix well.
  4. Cook rice or quinoa as per package instructions; chop tomatoes, lettuce, and onion.
  5. Air fry chicken at 380°F for about 10-12 minutes until cooked through (165°F internal temperature). Alternatively, sauté in a skillet over medium-low heat until golden brown.
  6. Let chicken rest for 5 minutes before slicing.
  7. Assemble bowls by layering rice/quinoa with veggies and sliced chicken; top with tzatziki sauce.
