- 4 boneless, skinless chicken breasts
- 14 oz. baby bella mushrooms (divided)
- 1/2 cup white onion (diced)
- 2 cups Gouda cheese (shredded, divided)
- 5 Tbsp. olive oil (divided)
- 2 cloves garlic (minced)
- 1 Tbsp. dried parsley
- 3/4 tsp. dried thyme
- 1/2 tsp. salt
- 1/8 tsp. ground black pepper
Instructions
- Preheat your oven to 400°F.
- Prepare mushrooms by chopping 10 oz. and slicing the remaining 4 oz. Set aside.
- Slice pockets into each chicken breast without cutting all the way through.
- In a skillet over medium heat, sauté chopped mushrooms in olive oil for about 5 minutes until tender.
- Add diced onions and seasonings; sauté for another 4 minutes.
- Mix sautéed ingredients with 1 cup of Gouda cheese in a bowl.
