  • 4 boneless, skinless chicken breasts or thighs
  • 1.5 pounds baby Yukon Gold or red potatoes
  • 4 cloves garlic
  • ⅓ cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine Italian seasoning, smoked paprika, salt, black pepper, and olive oil. Coat the chicken in the mixture.
  3. In another bowl, toss halved potatoes with olive oil, minced garlic, salt, black pepper, and half of the Parmesan cheese.
  4. Arrange the seasoned chicken on a baking sheet and surround it with the potatoes.
  5. Bake for about 30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and potatoes are tender.
  6. Top with remaining Parmesan cheese during the last 5 minutes of baking and garnish with fresh parsley before serving.
