  • 225 g dark chocolate
  • 56 g butter
  • 2 eggs
  • 100 g caster sugar
  • 90 g Demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g chocolate chips

Instructions

  1. Preheat oven to 160ºC (320ºF) for fan settings or 170ºC (338ºF) for conventional ovens. Line a baking tray with parchment paper.
  2. Melt the dark chocolate and butter in a heatproof bowl over simmering water, stirring until smooth. Mix in vanilla extract.
  3. In a separate bowl, whisk together caster sugar, demerara sugar, and eggs until light and fluffy (about 5 minutes).
  4. Sift together flour, cocoa powder, baking powder, and salt; fold in chocolate chips.
  5. Gently combine the melted chocolate mixture with the egg mixture, then fold in dry ingredients until just combined.
  6. Scoop tablespoons of batter onto the prepared tray, spacing them well apart.
  7. Bake for 12-14 minutes until set with crackly tops. Cool slightly before transferring to a wire rack.
