  • 1 tablespoon instant coffee granules
  • 3 tablespoons oil (light olive or vegetable)
  • 1 tablespoon vanilla extract
  • 2/3 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder

Instructions

  1. Preheat your oven to 350°F (175°C). Butter and line a 9×9-inch baking pan with parchment paper.
  2. In a medium saucepan over low heat, melt the butter and 2 cups of chocolate chips until smooth. Remove from heat and let cool for about 15 minutes.
  3. In a large bowl, whisk together eggs, sugar, instant coffee, oil, and vanilla until well combined.
  4. Stir the cooled chocolate mixture into the egg mixture until smooth.
  5. In another bowl, whisk together flour, cocoa powder, baking powder, and salt.
  6. Gently fold the dry ingredients into the wet mixture using a spatula until just combined; avoid overmixing.
