  • 1/2 tbsp Tony’s seasoning
  • 1 cup buttermilk
  • 1/2 tsp white pepper
  • 1/2 tsp salt
  • 2 eggs
  • 1 cup apricot
  • 1 tbsp chili sauce
  • 1/4 cup honey
  • 1/2 cup bourbon
  • Dash Sriracha
  • 3 tbsp unsalted butter
  • 4 slices brioche bread
  • 4 large eggs
  • 1/2 cup milk
  • 1 tsp almond extract (or vanilla)
  • 1 tsp cinnamon
  • pinch nutmeg
  • pinch salt

Instructions

  1. Marinate chicken thighs in buttermilk, salt, and pepper for at least 30 minutes.
  2. Heat oil in a Dutch oven to 350°F (175°C).
  3. Coat marinated chicken in a seasoned flour mixture and fry until golden brown (about 7 minutes per side).
  4. Prepare the sauce by simmering apricot preserves, bourbon, honey, and Sriracha until thickened.
  5. Make French toast by dipping brioche slices in an egg mixture and frying until golden.
  6. Assemble the sandwich by layering fried chicken and sauce between French toast slices.
