  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter (softened)
  • 3/4 cup brown sugar
  • 1/3 cup white sugar
  • 1 1/2 cups smooth peanut butter
  • 1 large egg
  • 1 large egg yolk
  • 7 oz jar marshmallow fluff

Instructions

  1. Preheat your oven to 350°F and prepare a 9×13 inch baking pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream together the softened butter and sugars until fluffy.
  4. Mix in peanut butter, then add the egg and egg yolk until smooth.
  5. Gradually incorporate the dry ingredients into the wet mixture.
  6. Reserve one cup of batter for topping, then press the remaining dough into an even layer in the prepared pan.
  7. Bake for about 25 minutes until set on top.
  8. Spread marshmallow fluff over the baked layer, then crumble reserved batter on top and bake for another 10 minutes.
  9. Cool completely before slicing into squares.
