  • 1 pre-made pie crust (or homemade)
  • 1 pound large Florida shrimp, peeled and chopped
  • 2 tablespoons butter
  • ½ cup onion, finely chopped
  • ½ cup celery, finely chopped
  • ½ cup red bell pepper, finely chopped
  • 2 cloves garlic, minced
  • ½ cup heavy cream
  • ½ cup whole milk
  • 1 teaspoon Dijon mustard
  • ½ cup shredded white cheddar cheese
  • ¼ cup Parmesan cheese
  • Panko breadcrumbs for topping

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Roll out the pie crust in a pie pan and pre-bake for 10 minutes until lightly golden.
  3. In a skillet, melt butter over medium heat and sauté onion, celery, and bell pepper for 3–4 minutes until softened. Stir in garlic and spices; cook for another minute.
  4. Add shrimp to skillet and cook just until pink (2–3 minutes). Remove from heat.
  5. In the same skillet, whisk in flour; gradually add cream and milk until thickened. Stir in mustard and cheeses until smooth.
  6. Combine shrimp mixture with creamy filling; pour into pre-baked crust.
  7. Top with panko breadcrumbs mixed with melted butter and Parmesan cheese.
  8. Bake for 25–30 minutes until golden brown and bubbling.
