  • 1 ½ lbs. boneless skinless chicken breast or thighs
  • 3 eggs (whisked)
  • ¾ cup cornstarch
  • ¾ cup buffalo sauce
  • 1 cup packed light brown sugar
  • 2 teaspoons apple cider vinegar
  • 1 tablespoon butter (melted)
  • Garlic powder
  • Chili powder (optional)
  • Mustard powder
  • Salt and pepper

Instructions

  1. Preheat the oven to 350°F (175°C). Mix all sauce ingredients and set aside.
  2. Cut chicken into 2-inch pieces and season with salt and pepper.
  3. Whisk eggs in a bowl; coat chicken pieces in eggs, then in cornstarch.
  4. Heat vegetable oil in a frying pan to 365°F (185°C) and fry chicken until golden brown (3-4 minutes per side).
  5. Drain excess oil on a wire rack, then toss the chicken in the Firecracker sauce.
  6. Transfer to a greased baking dish and bake for 20 minutes, tossing halfway through.
