Ingredients
- 2½ cups uncooked rotini pasta
- 1 cup sour cream

- 1 packet mild taco seasoning
- ½ teaspoon cumin
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 can (15 oz) corn (drained)
- 1 can (15 oz) black beans (drained & rinsed)
- 2½ cups cooked chicken
- 2 cups shredded cheese
Instructions
- Preheat the oven to 350°F and prepare a 9×13 baking dish with cooking spray.
- Cook rotini pasta according to package directions until al dente; drain without rinsing.
- In a large mixing bowl, combine sour cream, salsa, taco seasoning, cumin, garlic powder, and onion powder.
- Add drained pasta to the sauce mixture; stir to combine. Then mix in corn, black beans, cooked chicken, and 1 cup of cheese.
