- 1 large onion, diced
- 1 celery rib, sliced
- 3–4 garlic cloves, minced
- 4 cups vegetable stock
- 1 large yellow potato, peeled and grated
- 1 bay leaf
- ½ teaspoon dried thyme
- 1 (19-ounce) can white beans, drained and rinsed
- 10–12 ounces spinach, chopped
- 1 tablespoon fresh parsley, minced
- 1 tablespoon lemon juice
Instructions
- Heat olive oil in a large stockpot over medium heat.
- Sauté diced onions and sliced celery for about 5 minutes until onions are translucent.
- Add minced garlic and cook for an additional minute.
- Stir in vegetable stock, grated potato, bay leaf, and thyme; bring to a boil.
- Reduce heat to medium; cover and simmer for about 15 minutes.
- Mix in white beans and simmer for another 5 minutes.
- Add chopped spinach and simmer until wilted (about 1 minute).
- Remove from heat; stir in lemon juice and parsley. Adjust salt and pepper to taste.
