Ingredients

  • 2 tbsp olive oil
  • 1 white onion
  • 2 medium-large carrots
  • 2 cloves of garlic
  • 250 g dried red lentils
  • 1 tin of chopped tomatoes
  • 23 large baking potatoes
  • bay leaves
  • mixed herbs
  • rosemary
  • oregano

Instructions

  1. Preheat oven to 180 degrees C (350 degrees F).
  2. In a skillet, heat olive oil over medium heat; sauté diced onion and carrots for 5 minutes.
  3. Add minced garlic; cook for another 2 minutes. Stir in corn flour.
  4. Combine lentils, chopped tomatoes, herbs, and half the vegetable stock; bring to a boil then simmer for 15 minutes.
  5. Thinly slice potatoes while lentils cook.
  6. Transfer lentil mixture to a baking dish; layer potato slices on top.
  7. Drizzle with olive oil and season; cover with foil.
  8. Bake for 30 minutes covered, then uncover and bake for an additional 20 minutes until golden brown.
