  • 1415 oz canned salmon (well drained)
  • 2 Tbsp olive oil (divided)
  • 2 Tbsp unsalted butter (divided)
  • 1 medium yellow onion (finely diced)
  • 1/2 red bell pepper (diced)
  • 1/2 cup Panko bread crumbs
  • 1 large egg (lightly beaten)
  • 2 Tbsp mayonnaise
  • Worcestershire sauce
  • garlic salt
  • black pepper
  • fresh parsley

Instructions

  1. In a medium skillet, heat 1 Tbsp olive oil and 1 Tbsp butter over medium heat. Sauté the diced onion and bell pepper until softened and golden (about 7–9 minutes). Remove from heat.
  2. In a large mixing bowl, combine flaked salmon, sautéed vegetables, Panko bread crumbs, beaten egg, mayonnaise, Worcestershire sauce, garlic salt, black pepper, and minced parsley. Mix until just combined.
  3. Form the mixture into patties about 2 inches wide and 1/3 to 1/2 inch thick.
  4. In a clean non-stick skillet, heat the remaining olive oil and butter over medium heat. Cook the patties for 3 to 4 minutes per side until golden brown.
