Ingredients
- 14–15 oz canned salmon (well drained)
- 2 Tbsp olive oil (divided)
- 2 Tbsp unsalted butter (divided)
- 1 medium yellow onion (finely diced)
- 1/2 red bell pepper (diced)
- 1/2 cup Panko bread crumbs
- 1 large egg (lightly beaten)
- 2 Tbsp mayonnaise
- Worcestershire sauce
- garlic salt
- black pepper
- fresh parsley
Instructions
- In a medium skillet, heat 1 Tbsp olive oil and 1 Tbsp butter over medium heat. Sauté the diced onion and bell pepper until softened and golden (about 7–9 minutes). Remove from heat.
- In a large mixing bowl, combine flaked salmon, sautéed vegetables, Panko bread crumbs, beaten egg, mayonnaise, Worcestershire sauce, garlic salt, black pepper, and minced parsley. Mix until just combined.
- Form the mixture into patties about 2 inches wide and 1/3 to 1/2 inch thick.
- In a clean non-stick skillet, heat the remaining olive oil and butter over medium heat. Cook the patties for 3 to 4 minutes per side until golden brown.
