- 1 lb ground beef
- 1 medium yellow onion (diced)
- 2 tsp minced garlic (about 2 cloves)
- 1/4 cup taco seasoning (2 packets)
- 1/2 cup water
- 1 can (14.5 oz) fire-roasted diced tomatoes (undrained)
- 1 can (4 oz) green chilis
- 1 can (15 oz) black beans (drained and rinsed)
- 18 corn tortillas
- 6 cups shredded cheese (Monterey Jack & cheddar blend)
- Garnishes: diced tomato, sliced green onions, sour cream
Instructions
- Preheat the oven to 350°F and prepare a 9×13-inch casserole dish with non-stick spray.
- In a large skillet over medium heat, brown the ground beef and diced onion until the meat is fully cooked.
- Add minced garlic and sauté for an additional 1–2 minutes.
- Stir in taco seasoning and water; let simmer for a few minutes.
- Add fire-roasted tomatoes, green chilis, and black beans; cook until heated through.
- Layer six corn tortillas in the bottom of the baking dish. Top with one-third of the meat mixture and sprinkle with two cups of cheese. Repeat these layers twice more.
