  • 2 tsp minced garlic (about 2 cloves)
  • 1/4 cup taco seasoning (2 packets)
  • 1/2 cup water
  • 1 can (14.5 oz) fire-roasted diced tomatoes (undrained)
  • 1 can (4 oz) green chilis
  • 1 can (15 oz) black beans (drained and rinsed)
  • 18 corn tortillas
  • 6 cups shredded cheese (Monterey Jack & cheddar blend)
  • Garnishes: diced tomato, sliced green onions, sour cream

Instructions

  1. Preheat the oven to 350°F and prepare a 9×13-inch casserole dish with non-stick spray.
  2. In a large skillet over medium heat, brown the ground beef and diced onion until the meat is fully cooked.
  3. Add minced garlic and sauté for an additional 1–2 minutes.
  4. Stir in taco seasoning and water; let simmer for a few minutes.
  5. Add fire-roasted tomatoes, green chilis, and black beans; cook until heated through.
  6. Layer six corn tortillas in the bottom of the baking dish. Top with one-third of the meat mixture and sprinkle with two cups of cheese. Repeat these layers twice more.
  7. Cover with foil and bake for 30–40 minutes until bubbly and cheese has melted.
  8. Remove from oven, garnish with diced tomato and green onions, let sit for ten minutes before slicing.
