- 1/4 cup panko breadcrumbs
- 1 large egg (beaten)
- 2 teaspoons ketchup
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1 tablespoon extra-virgin olive oil (for the skillet)
- 2 tablespoons unsalted butter
- 2 tablespoons flour
- 1 1/2 cups beef stock
- 1 tablespoon ketchup
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon onion powder
- 6 ounces sliced cremini mushrooms

Instructions
- In a large mixing bowl, combine ground beef, breadcrumbs, egg, ketchup, mustard, oregano, and kosher salt until well mixed.
- Shape the mixture into four oval patties about 3/4-inch thick.
- Heat olive oil in a nonstick skillet over medium-high heat and cook patties for about 3 minutes per side until browned. Remove from skillet.
- In the same skillet, melt butter and add flour; whisk until smooth.
- Gradually add beef stock while whisking to remove lumps. Stir in ketchup, Worcestershire sauce, onion powder, and mushrooms; simmer for about 5 minutes.
- Return patties to gravy; cover and cook for an additional 10 minutes until cooked through.
