Ingredients
- 3–4 cups cooked shredded chicken
- 1 medium onion, chopped
- 1 cup sour cream
- 1/2 cup chopped parsley
- 1 large can enchilada sauce
- 3 cups shredded cheese
- 10–16 flour tortillas
- 1 tablespoon olive oil
Instructions
- Preheat oven to 350ºF.
- In a pan, heat olive oil and sauté chopped onions until translucent.
- Add shredded chicken and stir to combine.
- Mix in enchilada sauce, sour cream, and parsley until well blended.
- Stir in 2-2.5 cups of cheese until melted.
