  • 2 large chicken breasts
  • Salt & pepper (to taste)
  • 4 tablespoons butter (divided)
  • 1 tablespoon olive oil
  • 1/4 cup chicken broth (or dry white wine)
  • 1 tablespoon lemon juice + zest of 1 lemon
  • 1 tablespoon brined capers (drained)
  • 1/2 cup heavy/whipping cream

Instructions

  1. Slice chicken breasts lengthwise into thin cutlets and season with salt, pepper, and garlic powder. Dredge lightly in flour.
  2. In a skillet over medium-high heat, melt 2 tablespoons of butter with olive oil. Cook chicken for about 4-5 minutes on each side until golden brown. Remove from skillet.
  3. In the same skillet, add chicken broth, lemon juice, zest, remaining butter, and capers. Scrape any browned bits from the pan.
  4. Stir in heavy cream and return to heat until bubbling. Add chicken back to the pan and cook for 5 more minutes until done and sauce thickens.
  5. Garnish with parsley or parmesan before serving.
