  • 5 pieces of bacon
  • 1 lb ground beef
  • 1/4 cup butter
  • 1/4 cup diced onion
  • 2 sticks diced celery
  • 1/2 teaspoon minced garlic
  • 6 tablespoons flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Worcestershire sauce
  • 1 lb Yukon potatoes (peeled & diced)
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. In a large soup pot, cut the bacon into small pieces and cook over medium-high heat until crispy (about 10 minutes). Transfer to a paper towel-lined plate, leaving the fat in the pot.
  2. Add ground beef to the same pot and brown while breaking it apart. Drain any excess fat and set aside.
  3. Melt butter in the pot; add diced onion and celery. Sauté for about 4-5 minutes until softened.
  4. Stir in minced garlic and flour; cook for around 2 minutes until combined.
  5. Gradually whisk in chicken broth until smooth; dissolve all flour lumps.
  6. Mix in heavy cream, Worcestershire sauce, diced potatoes, and return browned beef to the pot. Bring to boil then reduce heat to medium-low, slightly covering with a lid.
  7. Simmer for about 15 minutes or until potatoes are tender, stirring occasionally.
  8. Remove from heat and stir in shredded cheddar cheese until melted.
  9. Incorporate most of the cooked bacon (reserve some for garnish) and season with salt and pepper.
