Ingredients
- 3 cups rotisserie chicken (shredded)
- 2 (15 oz) jars alfredo sauce
- 1 box (12 oz) oven-ready lasagna noodles
- 3 cups mozzarella cheese (shredded)
- 1½ cups parmesan cheese (shredded)
- 1 (32 oz) container ricotta cheese
- 2½ cups baby spinach (chopped)
Instructions
- Grease your 6-quart crock pot with nonstick cooking spray.
- In a mixing bowl, combine mozzarella, parmesan, ricotta, minced garlic, salt, pepper, Italian seasoning, and eggs until well mixed.
- Spread ¾ cup of alfredo sauce in the bottom of the crock pot. Layer with 5 noodles broken to fit snugly.
- Top with half of the remaining alfredo sauce, half of the cheese mixture, shredded chicken, and spinach.
- Repeat layering: add another set of noodles followed by sauce, cheese filling, chicken, and spinach.
- Finish with any leftover noodles and remaining alfredo sauce on top.
- Cover and cook on low for 4 hours.
- After cooking time is up, sprinkle the top with an additional 1½ cups mozzarella cheese and let sit covered for about 10-15 minutes before serving.
